I tried to map these but I am getting

It's difficult to answer without knowing exactly which error are you receiving, but I can guess... If menuItems is an IEnumerable<MenuItem>
, you should write
var result = Mapper.Map<IEnumerable<MenuItemViewModel>>(menuItems);
